Skillet Chocolate Chip Cookie

Cast iron skillets are great for many things – one such thing being massive chocolate chip cookies! This dessert is so easy to throw together, especially since you only use one pan from start to finish. The edges are a nice crisp golden brown while the center is still a bit gooey, which makes for my kind of cookie. You can easily take this recipe and turn it into a massive version of your favorite cookie. Say, white chocolate macadamia nut or oatmeal raisin? I think I’ll stick to chocolate chip, but the possibilities are endless and delicious!

Skillet Chocolate Chip Cookie

Ingredients:
1 stick unsalted butter
1/2 cup granulated Sugar
1/2 cup light brown sugar
1 tsp vanilla extract
1 whole egg
1 1/2 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup chocolate chips (whatever type you prefer)

Yield: 1 big cookie…8 servings or so

Directions:
Preheat oven to 350 degrees F. Melt butter in a cast iron skillet set over medium-low heat. Stir in sugars and vanilla and remove from heat. Let rest until pan is warm, but no longer very hot, about 5 minutes.

Crack an egg onto the butter and sugar mixture and whisk it into the mixture. Add flour, baking soda, and salt and very carefully stir into the mixture until smooth and well-mixed. Stir in the chocolate chips. Place the skillet in the oven for 15-25 minutes, or until it starts to turn golden on the top and around the edges, but still soft in the center. Cut into wedges and serve while warm, top with ice cream if wanted.

Chocolate Chip Cheesecake Bars

You really get an awesome combination with these bars – a crisp graham cracker crust, a creamy cheesecake layer, topped with sweet chocolate chip cookie dough. Yum! These bars were made for a coworker’s Birthday (shout out to Stacey!) and were her special request. I love when people encourage my baking habits! :)

These were quite simple to make, they just took a little longer than anticipated to cook thoroughly. So give yourself plenty of time to be safe! For folks who love lots of different types of desserts, this recipe would be a winner – enjoy!

Chocolate Chip Cheesecake Bars

Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
5 Tbsp unsalted butter, melted

Chocolate Chip Cookie Dough:
5 Tbsp unsalted butter, room temperature
1/3 cup light brown sugar
3 Tbsp sugar
1/4 tsp salt
1 tsp vanilla extract
3/4 cup all-purpose flour
2/3 cup chocolate chips

Cheesecake Filling:
10 oz cream cheese, room temperature
1/4 cup sugar
1 large egg, room temperature
1 tsp vanilla extract

Yield:  12 bars

Directions:
Preheat oven to 325 degrees F. Line an 8×8 square baking pan with foil, allowing a little overhang, and spray with nonstick cooking spray. Set aside.

Mix the melted butter and graham cracker crumbs until thoroughly combined. Press the mixture into the bottom of the prepared pan. Bake in the preheated oven for 6 minutes. Remove the pan to a cooling rack.

While the crust is cooling, prepare the chocolate chip cookie dough. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat the butter, brown sugar, sugar, salt, and vanilla until smooth and thoroughly combined. Mix in the flour on low speed, and mix until just incorporated. Mix in the chocolate chips. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, cream together the cream cheese and sugar until smooth. Mix in the egg and vanilla on low speed until just incorporated. Pour the cheesecake batter onto the prepared crust. Using your hand to form small clumps, distribute the cookie dough onto the top of the cheesecake batter. Be sure to use all of the dough.

Bake for about 45 minutes, until the cookie dough is cooked and firm and the entire pan looks set if given a gentle shake. Move the pan to a cooling rack and allow to cool completely. Chill the pan in a refrigerator overnight if possible or for at least a couple hours. Lift the bars out by the foil overhang and cut into squares for serving.

Deep Dish Chocolate Chip Cookie

There’s not much to say about this dessert besides the fact that it’s incredibly delicious. Any chocolate chip cookie lover has to try this recipe – the crisp edge and soft center is to die for. Then add some ice cream and chocolate sauce on top for an even more decadent treat! Enjoy this on your ‘cheat night’ or be nice and share it with someone, since it’s a rather rich and sweet dessert.

Deep Dish Chocolate Chip Cookie

Ingredients:
1 stick unsalted butter, cold and cubed
1/4 cup sugar
1/2 cup light brown sugar
1/4 cup dark brown sugar
1 egg
1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/8 tsp baking soda
1 cup chocolate chips (whatever kind you like)
Vanilla ice cream and Chocolate Sauce (optional)

Directions:
Preheat oven to 375 degrees F. Cream the butter and sugar together until well blended and fluffy. Add the egg and mix until well combined. Add the flour, salt, baking soda, and baking powder and mix until combined. Fold the chocolate chips into the dough.

Take four ramekins and divide the dough equally between them. Put the ramekins on a baking sheet and bake on the middle rack for 15 minutes, until the tops are just golden brown. (should still be a little soft and gooey in the center)

Serve while hot. Place each ramekin on a small plate and top with a scoop of vanilla ice cream and a drizzle of chocolate sauce. Enjoy!
