Mashed Potato Pancakes

Maybe it’s my Czech/German heritage, but I ate a lot of potato pancakes growing up. Whenever we’d have leftover mashed potatoes, my mom would fry them in a skillet and we’d devour them. There are all kinds of ways to eat them, both sweet and savory. My preference is with either with butter and syrup (like an actual pancake) or with a bit of honey. Or, you could season them with some salt and pepper and dress them up with some cheese and sour cream like a baked potato.

When I saw leftover mashed potatoes in the fridge yesterday, I knew what was coming. There really isn’t a set recipe for these…you just take a handful of potatoes, shape them into a pancake, and fry in a pan on the stove until each side has a nice brown crispy exterior. The crunch on the outside and the gooey potato on the inside is one of life’s simple pleasures. Enjoy!
