Broccoli Cheddar Soup

A few weeks ago, I accidently bought frozen chopped broccoli instead of broccoli florets. After realizing this, I knew I had to use this mistake for something awesome. Thus, the idea of broccoli cheddar soup arose. And it was good. So very good.

Broccoli Cheddar Soup

1 bag of frozen chopped broccoli (12 oz)
1 can of chicken broth (14 oz)
2 Tbsp butter
1 tsp onion powder
1/4 tsp ground white pepper
1 Tbsp all-purpose flour
1/3 cup milk
1/3 cup heavy cream
1 and 1/2 cups shredded sharp cheddar cheese

Combine the chicken broth and broccoli in a medium sized pot. Heat for about  15 minutes over medium heat and let it simmer. Add butter, onion powder, white pepper, and flour and stir to combine. Add the milk and cream and stir to combine. Add the shredded cheddar and stir until melted. Serve and enjoy!

-If you don’t have cream, you can use 2/3 cups of milk. I just had cream on hand and wanted to use it!
-Freshly shredded cheese works best, but pre-shredded will work too.
-If you want a smoother soup, you can use a potato masher to smash the pieces once it’s cooked or put the broccoli in a blender or food processor beforehand.
