Coleslaw. When most people hear this word, I bet they think of the traditional kind with a creamy mayo based dressing. That’s the only type I’d ever eaten, especially my grandmother’s delicious homemade variety. But this recipe takes coleslaw to a whole different level. The flavor profile is AMAZING – the fresh ginger and lime juice makes for a healthier but equally yummy alternative. Then throw in a bunch of cilantro, sprinkle some sesame seeds on top, and you’ve got one tasty side dish!
Lime Ginger Coleslaw
1 bag Cole Slaw Mix, 12 Ounce (mine included carrots and red cabbage)
1/2 cup Fresh Cilantro
3 Tbsp Fresh Lime Juice
2 Tbsp Brown Sugar
2 tsp Canola Oil
1 and 1/2 tsp Fresh Grated Ginger
1/8 tsp Salt
Sesame Seeds to garnish
Combine slaw mix and cilantro in a bowl and toss to combine. (add extra cilantro if desired)
Whisk remaining ingredients together in a bowl to make the dressing. Pour over slaw mixture and toss well. Let it stand 10 minutes before serving. Sprinkle sesame seeds on top to garnish if wanted. Toss again as needed.
