Did you ever have a certain food that you avoided eating your whole life, only to finally try it and love it? And then you mourned the fact that you’ve missed out on it for so long? Sweet potatoes fit that category for me. I’d avoid their marshmallow topped version at Thanksgiving each year and turn up my nose at any recipe involving them. Then one day, I was out to eat with a friend and tried one of her sweet potato fries on a whim. And BOOM. Instant sweet potato love. So as an ode to my first taste experience – here’s a recipe for easy baked sweet potato fries. Enjoy!
Baked Sweet Potato Fries
2 whole Sweet Potatoes
2 Tbsp Olive Oil
1 pinch Salt
1 pinch Pepper
Peel the sweet potatoes and cut into long strips (the thickness of french fries). Then place them in a medium-sized bowl and mix with olive oil, salt and pepper.
Place on a cookie sheet, making sure they are spread out so they each heat at the same temperature.
Bake at 350 degrees for 15-20 minutes. Then, flip them over and bake again for about 10 minutes or until soft.
