Teriyaki Turkey Wrap

This is such an easy, flavorful, and healthy meal that can be personalized in lots of ways. You can use ground beef or any other meat, add other veggies, and even mix up the spices and sauces. My favorite variety is using ground turkey and adding peppers, garlic, ginger, teriyaki sauce, cilantro, and peanuts. But a soy sauce/cashew/carrot blend would be tasty too – or any other take depending on the flavors you prefer! Also, feel free to try different varieties of lettuce and find out which kind you like best. I used iceburg (it was on sale and is always easy to use) but would love to try it with Bibb or Boston lettuce next time. Either way, it’s so delicious and diet-friendly – how could you go wrong? 🙂

Teriyaki Turkey Wrap

Ingredients:
1 lb ground turkey
1/2 bell pepper, diced
1/2 cup cilantro leaves
2 Tbsp teriyaki sauce
1/2 tsp garlic powder
1 1/2 tsp ground ginger (or fresh grated ginger)
Unsalted peanuts, roughly chopped
Lettuce leaves, rinsed, dried, and trimmed (Iceburg, Bibb, Boston, etc…)

Directions:
Cook turkey and drain grease. Add diced pepper, teriyaki sauce, garlic, and ginger. Stir together and spoon into lettuce leaves. Top with cilantro and peanuts – enjoy!
