Chocolate Nutella Lava Cake

I made this dessert as a special treat for my hubby and it was spectacular! The chocolate cake combined with a Nutella filling was so rich and decadent. It was rather easy to make but the most important thing to ensure it comes out perfectly is to REALLY grease the ramekins or dishes you bake these in. Otherwise, they won’t smoothly slip out of the containers and sadly their whole shape will be ruined.

So the next time you’re looking for a fancy dessert for a dinner party or your special someone, give this recipe a shot! I mean, how can you beat a warm chocolate cake with creamy Nutella flowing out? I submit that you cannot! 🙂

Chocolate Nutella Lava Cake

11 Tbsp unsalted butter
6 oz bittersweet chocolate chips (I used Ghiardelli)
3 eggs + 3 additional egg yolks
1/4 cup sugar + 2 additional Tbsp
6 Tbsp all purpose flour
4 Tbsp Nutella
1/4 cup chopped Hazelnuts (optional)

Preheat oven to 350 degrees F. Place the butter and chocolate chips into a double boiler and allow to melt completely over the steaming water. Stir frequently.

While the chocolate butter is melting, place eggs and sugar into the bowl of your mixer. With the whisk attachment, mix on medium-high speed until they become light and thick (about 8-9 mins). When light and thick, add the flour and mix together.

Slowly and gradually, pour the chocolate/butter mixture into the egg mixture. Mix on low until well combined and develops a glossy sheen (about 5-6 mins).

While the mixture is finishing it’s final mixing (turning glossy) GENEROUSLY spray 4 small ramekins with cooking spray. When the batter is finished, it’s time to assemble:

Place sprayed ramekins onto a cooking tray. Ladle batter HALFWAY up the side of each ramekin. Then, spoon 1 Tbsp of Nutella into each ramekin. Finish spooning the remaining batter into each ramekin (do not overfill). Bake ramekins for 1o-14 mins until outside is solid and top appears to be soft (but NOT jiggly)

While cakes are cooking, chop your hazelnuts. When cakes are ready, CAREFULLY remove them from the oven. Place a small plate on top of each one and quickly invert it. With a kitchen towel, remove the ramekin and cake should fall right out. Garnish with hazelnuts and serve immediately if possible!

    Thanks! I was a little nervous that I’d mess them up, but really, if you just grease the ramekins well, you shouldn’t have any problems! : )
